Added Claude Sonnet 5 to AI Model & API cost estimator

We have added Anthropic's latest model, "Claude Sonnet 5", to the AI Model & API cost estimator page. We also made minor adjustments, such as updating the minimum cache tokens for existing models and marking deprecated models.
